Amazing Recipe (Sesame Zucchini Noodles) and Review with Jiva Organics Black Sesame Seeds #jivaorganics



Hello Dear Readers:

 I have the most amazing recipe to share with you. I discovered it while searching Pinterest for something to use my zucchini from our CSA farm and these delicious and nutritious sesame seeds from Jiva Organics. YUM...so without further ado:



Sesame zucchini noodles (inspired by the recipe found at : Zen Belly Catering )

prep time: 30 minutes  |  cook time: 0  |  serves: 4
 


2 pounds zucchini (about 6 medium)
1 teaspoon finely ground sea salt
1/4 cup tahini
1 (1-inch) piece fresh ginger, peeled and grated
2 tablespoons coconut aminos
1 tablespoon toasted sesame oil
1/2 teaspoon red pepper flakes
1 small bunch scallions, sliced
2 tablespoons black  sesame seeds
    Directions:
    • Peel the zucchini (if desired) use a spiral slicer to make the zucchini pasta.
    • Place in a colander and toss with the salt. Allow to sit and sweat out the excess liquid for 20 to 30 minutes.
    • Meanwhile, mix together the tahini, grated ginger, coconut aminos, sesame oil and red pepper flakes.
    • Once the zucchini noodles have sat for 20 to 30 minutes, give them a rinse under cold water and drain them well. Dump them out onto several layers of paper towels or a kitchen towel to get out any excess moisture.
    • Stir the noodles into the sauce and top with the sliced scallions, and sesame seeds.
