Delicious, nutritious salad swap sponsored by Fresh Express! #momsmeet #saladswap

  As most of you know, for the past 10 months I have been following a healthy food plan consisting mostly of vegetables, proteins and low glycemic fruits. I have eliminated added sugar, starches and most naughty carbs in the form of cookies, breads and cakes. So what do I eat twice a day and mix it up to make the ingredients delicious, healthy and exciting? You guessed it, SALAD! I love salad. Throw on fresh vegetables, proteins and fruit and I make a whole meal out of salad. And my new fave is from Fresh Express. It is a baby kale mix and is super delicious with baby kale, spinach and chard.  I put everything on it. Including nothing sometimes. And I have been experimenting with dressings too! Yum.

When you join, you can track your calories, find great recipes and inspiration, and experiment with the app by choosing your fave higher calorie meal and its salad swap.  I picked a chicken burrito since I eat a lot of chicken and love adding beans, onions and peppers.  This recipe caught my eye:

So then, one night I experimented with my own ingredients and recreated a chicken fajita salad:


My homemade chicken fajita salad! 

Simple and easy to make.  Grill some chicken , onions and peppers in coconut or avocado oil. Then add in spices of your choice (I like hot pepper, cayenne pepper, salt and pepper etc). Then put a lovely pile of the lettuce of your choice (I chose my fave, the mixed baby kale)  add cilantro, avocado slices and if you eat dairy, some mixed cheese. I used lime juice to cook as well and put a dollop of homemade avocado cilantro dressing.  Delicious!!!
